Happy Monday! Ok, just kidding. It really isn’t Monday yet. But let’s face it, Monday will be here before we know it and instead of dreading its arrival how about we do something different and decide to look forward to Monday. It’s the start of a new week. The perfect day to try something new, make different choices and to be the best possible version of ourselves.
If you are a football fan then you know that Monday also happens to be a big football night! (Go Lions!) So how about you join me in sidelining the traditional Monday Night Football snacks and replacing them with some great plant-based snacks and meals?
Silk, one of mine and B’s favorite brands, has created a #MeatlessMondayNight Challenge which is quite simple. On Mondays all you have to do is not eat meat. Easy right? Well if you are B it is actually very easy since he doesn’t really care for meat. It’s his choice and probably more of a texture issue than anything else. That and he is known for being a picky eater or as I prefer to look at it, he knows what he likes.
For others, myself included, not eating meat at a meal may seem odd or even difficult to accomplish but I promise you that Silk has made it easy for us by providing great meatless recipes that you can find on their site here.
I am also a big fan of using Pinterest for finding new and different recipes and that is exactly where I headed this past Monday for our meatless Monday dinner.
I am a big fan of simple and easy to make recipes so when I came across this Sweet Potato and Black Bean Quesadillas recipe, I knew it was the recipe for me! It has just three ingredients (we omitted the cheese) and it is super easy to make.
The end result was a very tasty Monday night dinner that was quick and easy to make! That is a win in my book.
So why am I taking on the Silk Meatless Monday Night Challenge? Partly because I want to find other options for B who doesn’t like meat and partly because I want to add more plant-based meals into my diet because I don’t think meat is necessary at every meal.
